Baked Beans (New England Style)
Ingredients:
1/2 cup chopped onion
3 1/2 cup dry navy beans
1/2 cup packed brown sugar
1 lb smoked ham
1/2 cup molasses
1 tsp salt
1/2 lb bacon
1 tsp dry mustard
Directions:
Completely soften the beans by soaking them overnight.
Drain the beans, reserving 1 cup of liquid.
Put the beans in a crock-pot.
Add all the remaining ingredients along with the 1 cup of reserved bean liquid and mix well.
Cover and cook on low for 10 - 12 hours or on high for 4 - 5 hours, stirring occasionally.
Cut the ham from the bone and return it to the crock-pot.
If thicker beans are desired, uncover them and turn the heat to high during the last hour.
