Crab Crostini
Ingredients:
8 oz. crabmeat (imitation is fine)
1/2 cup diced red pepper
4 tbsp. mayonnaise
2 tbsp. chopped fresh parsley
1 tbsp. chopped fresh chives
1 tbsp. fresh lime juice
1 tbsp. Dijon mustard
2 tsp. grated Parmesan cheese
4-5 drops hot pepper sauce
4 oz. Italian bread, cut into 16 slices
Directions:
Preheat the broiler.
Line a broiler pan with foil.
Blend all the ingredients except for the bread.
Spread 1 tbsp. of the mixture on each slice of bread.
Place the bread slices on the broiler pan and broil 4 inches from the heat for 5-6 minutes until lightly browned.
