Ham And Apples Crêpes
Ingredients:
3 eggs, well beaten
3/4 cup milk
2/3 cup all-purpose flour
1/4 cup chopped onion
2 tablespoons sweet green peppers, seeded and minced
1/4 cup celery, chopped
2 medium green apples, peeled, cored, and chopped
1/2 cup all-purpose flour
1 cup chicken broth
1 cup light cream
1 teaspoon curry powder
2 cups cooked ham, diced
6 tablespoons butter
Directions:
Beat the eggs, milk, and flour until smooth, with the consistency of heavy cream.
Brush the bottom of a 6" skillet with butter, then spoon in 2 tablespoons of batter, rotating the pan to coat the bottom evenly.
Cook until the outer edge of the crêpe is brown, then remove from the pan, turn, and brown the other side. Make crepes until all of the batter is used.
Melt the butter and sauté the onion, celery, green pepper, and apples, stirring until tender.
Sprinkle with flour and stir, then cook for one minute.
Gradually stir in the chicken broth, cream, and curry powder.
Cook, stirring, until the sauce boils, then fold in the ham.
Cool slightly and spoon 1/4 cup of filling on each crêpe.
Roll up and place in a heavily buttered shallow casserole dish.
Bake at 400 degrees F for 15-20 minutes.
